Vermut 987 is the third reference from 987 Spirits Drinks, the Bierzo distillery in Ponferrada founded in 2015 after the success of 987 gin and Lollipop. Launched in 2017 and inspired by a 1920s recipe, it starts from white wine macerated with twelve botanicals — gentian, wormwood, boldo, cinnamon, coriander, thyme, vanilla, cherry, orange peel and secret touches from their distillations. An accessible, very drinkable vermouth within the Bierzo artisan universe. For Vermutpedia, it represents the distillery's vermouth bet: herbal, approachable and rooted in Ponferrada botany.

How to serve it

Classic preparation: with ice and olive as aperitivo, or in cocktails with rum, whisky or other spirits per house recommendation. Serve between 6 and 8 °C in wide glass or tumbler; olive reinforces the classic aperitivo format. Works in Manhattan or Boulevardier when a softer, more drinkable red vermouth is wanted. Pairs with tapas, nuts and informal Ponferrada gatherings. At room temperature herbal notes flatten; refrigerate before serving. 100 cl format in catalogue; approachable artisan pricing. After maceration, mixed with sugar, filtered, rested a few days and bottled. No declared barrel ageing. 15% vol.
