Vermut Binitord Negre is the vermouth of Vinyes Binitord de Menorca S.L. in Ciutadella: a family artisan project where sustainability and quality go hand in hand, according to binitord.com. The bodega planted its first vine in 2002 and released its first wine in 2007; today the team continues to work in the calm of the island, with creativity and respect for the vineyard. Vermut Negre shares the portfolio with Binitord Rosat, Binitord Negre and Ciutat de Parella.

Nose and palate

Totally artisan production on a base of red grapes from the estate vineyards, vinified on the property. After a passage through French and American oak barrels, it is cold-macerated with natural aromatic plants and herbs from Menorca — chamomile, rosemary, fennel — according to the Vermut Negre sheet on binitord.com. Morello cherry or mahogany colour with amber reflections; island herbal nose and a palate balanced between sweetness and vermouth bitterness.

How to serve it

Chilled in mescladets and island aperitifs; olives, seafood or local charcuterie. Also in a glass with ice as a Balearic author vermouth before the meal.
