Vermut del Paraíso is the flagship vermouth of Bodega Paraísos Perdidos, winemaking project in Mula (Murcia) with organic vineyards in D.O. Bullas and production in its own nave. According to the winery's official catalogue, the base starts with Bullas Macabeo resting four months in new French oak barrels, blended with a selection of very old Marina Alta muscat grapes. The blend undergoes patient, meticulous artisan infusion with 33 botanicals —most supplied by Carmencita—: citrus peels, flowers, aromatic herbs, roots and spices. The citrus component comes from maceration of Verna lemon, blood orange, Buddha's hand and kumquat from Belsan (Murcia). Mahogany with amber flashes, clean and bright. Label with the motto «Artisanal, Mediterranean and with soul». 15% vol., 75 cl. The aperitivo bet of a winery that also makes wines such as Vid(a) Salvaje.
Nose and palate
Amber mahogany, clean and bright. The blend of barrel-aged Macabeo and old Marina Alta muscat reads as orange and quince preserve washed by Verna lemon and Murcian kumquat; not a superficial citrus vermouth but a layered Mediterranean: scrub thyme and fennel, faint jasmine, cinnamon and nutmeg rounding without masking. New French oak adds fine vanilla and a toasted note evoking Bullas woodland. On the palate it is silky and broad —semisweet sweetness dialogues with lively citrus acidity—, with contained herbaceous bitterness and a ginger and allspice spark at the close. Unctuous texture, long persistence, sunny finish inviting a second glass on the terrace. More complex and fruity than single-grape Murcian vermouths; the weave of thirty-three botanicals integrates without industrial artifice.
How to serve it
Very cold in Mediterranean aperitivo: the house conceives it for vermouth hour with friends, on terrace or in the Mula nave. Wide glass with ice and blood orange or Verna lemon slice to underline Murcian citrus link. The catalogue recommends pairing with gildas, cheeses, ibérico charcuterie, salted fish, coca amb tonyina, preserves and seafood. Also works with soda for a lighter profile without losing ginger finish. At 6–8 °C it keeps silkiness and freshness.
