Vermut Florido is the vermouth from Bodegas César Florido in Chipiona (Cádiz), one of the oldest wineries in the Marco de Jerez —viticultural tradition since the 18th century, fifth family generation and speciality in moscateles, finos, amontillados and olorosos according to bodegasflorido.com. According to the Bodegabierta sheet, it combines a base of generous wines —structured finos, dry olorosos with walnut notes and sweet aromatic moscateles— aged in old oloroso butts for five to eight years before maceration with botanicals: wormwood, gentian, citrus, clove and cinnamon, among others. Intense mahogany colour with deep reddish glints; Andalusian aperitif profile with Jerez depth, unctuousness and sweet-bitter balance. 15% vol., 75 cl. For Vermutpedia, Florido documents historic Chipiona vermouth: Palomino and Moscatel in butts, classic botanics and Atlantic generous character —soleras metres from the ocean— verifiable at bodegasflorido.com and specialist retailers.

How to serve it

According to Bodegabierta, perfect as an aperitif with olives, tapas and Mediterranean cooking; pairs with preserves and salted fish —anchovies, vinegar boquerones, gildas or pickled mussels— for its intensity and salinity. Serve very cold with ice. Also at the bodega shop in Chipiona.

Bodegas César Florido (Chipiona, Cádiz). Artisan production: selection of finos, olorosos and moscateles; ageing in old oloroso butts (5-8 years); subsequent botanical maceration. Commercial sibling to the Cruz del Mar range, manzanillas and house moscateles.
