Fuenlabrada

Overall impression

Zarro Especial Taberna Blanco is the white variant of the Especial Taberna range from Bodegas Sanviver (Fuenlabrada, Madrid), a bodega making vermouths since 1968 and the sole producer in the Community of Madrid with capacity above five million litres a year. According to elvermutdemadrid.com and the Salon Gourmets catalogue, it is the vermouth of always made the traditional way, presented in a limited-edition vintage bottle evoking the capital's most authentic tabernas —'vivir Zarro, sentir Madrid'—. The house highlights elegance, freshness and traditional production with cardamom touches in the white. Built for nostalgic palates seeking the classic tap vermouth flavour in bottled form for home or bar. 15% vol., 75 cl. For Vermutpedia, it represents Madrid taberna white: semisweet, aromatic and accessible, sibling of Especial Taberna Rojo within the Zarro range alongside Reserva, Gran Reserva and Ecológico.

How to serve it

Zarro recommends Especial Taberna to enjoy at home or at the usual bar the classic flavour of vermouth of a lifetime. Serve very cold, with ice and a lemon slice —a format that enhances the white's citrus—; also in sophisticated cocktails when a semisweet Madrid white with soul is wanted. Taberna range versatility allows different combinations, though the house notes it pairs perfectly with typical Madrid tapas: olives, conservas, soft cheeses, seafood and nuts. Temperature between 6 and 8 °C, in a wide glass or low tumbler. Pairs with salty appetisers, salads and light fish. For collectors, the limited-edition vintage bottle adds emotional value beyond the liquid. It does not replace tap Zarro in litres: it is its bottled version with the same taberna philosophy. Coherent with the Especial Taberna range and Sanviver portfolio (Marianito, Reserva, Ecológico).
