Solera
Solera is a dynamic ageing system that blends fractions of different ages through periodic withdrawals and replenishments.
The scales of vessels are called criaderas and solera; from the oldest a portion is drawn and replenished with younger product. Thus style continuity is maintained without age being expressible as a simple vintage.
Applied to vermouth, it favours integration and oxidative complexity, especially with barrels. It is a specific mode within vermouth ageing.
