Ageing

Vermouth ageing is its refining over a controlled period in wood, tank, tinaja or another vessel before bottling.

During ageing, aromas integrate and toasted, balsamic or oxidative notes may appear. The result depends more on the vessel and conditions than on time alone.

There is no universal equivalence between months of ageing and the word reserva. Falset Reserva illustrates a tradition where wine, botanicals and maturation form a whole.
