A tinaja is a clay or earthenware vessel used to ferment, age or refine drinks. In vermouth it can favour an evolution different from wood.
Depending on porosity, lining and size, it allows variable oxygen exchange without adding toasted oak aromas. That is why it preserves the prominence of the base wine and the botanicals.
Not every tinaja produces an oxidative profile: sealing and handling are decisive. It sits among the options described in vermouth ageing, alongside barrel and tank.
