Barrel

A barrel is a wooden vessel used to age or refine vermouth. It can bring slow oxygenation and notes of vanilla, toast, dried fruit and spice.

Size, age, origin and previous use of the wood condition its effect. In vermouth ageing, an old barrel usually marks the flavour less than a new one.

Prolonged contact can round bitterness and favour oxidative notes, but it does not automatically make a product a reserva. An example of long tradition is Falset Reserva.
