Vermouth blanc sec 2024 from L'Atelier du Bouilleur is a vin muté aux herbes from the Haute Vallée de l'Orb. Mattia Garfagna contributes a Viognier-Muscat blend from southern parcels; must ferments and is fortified with previously aromatised wine eau-de-vie. Tenth-anniversary distillery cuvée (2014), with a recipe similar to blanc dry 2021 but adapted to different grapes and harvests.
Nose and palate
Golden liquid with notes of flower honey, jasmine, candied orange and cinnamon. Fresh palate, light acidity and clove, citrus and spice-bread spices wrapping the bitterness of artemisias (armoise, absinthe, arquebuse). The gourmandise of wine and residual sugar (36 g/L, vermouth sec category) contrasts with a dry tannic sensation from roots — saint-benoîte and Orb mountain chicory — and wine acidity.
How to serve it
Cold, in dry Martini or long with soda. Each ingredient macerates in cloth within alcohol and fortified wine; winter cold clarifies before spring bottling.

17% vol., 36 g/L residual sugar, 75 cl, 2024 vintage. Ingredients from the Haute Vallée de l'Orb and citrus from local neighbours. Sibling of demi-doux 2025 from the same house.
