Overall impression
Berumotto Blanco is Seda Líquida's sake vermouth in Tuixent (Alt Urgell), on the southern slopes of the Cadí range: Antoni Campins and Isabel Martínez macerate herbs from the Trementinaires valley —a healer tradition documented since the mid-19th century— and spices on house-made sake, instead of the usual white wine. Seda Líquida, S.L., founded in 2015 with its first sake production at the end of February 2016, applies a formula inspired by Priorat artisan vermouth makers with no equivalent on the Iberian peninsula.
Nose and palate
Straw yellow or soft brilliant gold. Aroma reminiscent of gentian and a wide palette of wild herbs; on the palate, the full breadth of its botanicals and spices, with sweetness and bitterness perfectly balanced through the finish. The sake base offers less body than a wine vermouth, but more finesse and subtlety.
How to serve it
Very cold (~8 °C) in an old fashioned glass with one or more stuffed olives and lemon or lime peel. As a very fine, subtle drink, the winery does not recommend conventional ice: only stainless-steel cubes or waterproof-covered cubes. Pairs with salted, pickled or fried bites.
Production context
23 aromatic herbs —in practice, more than 30— including wormwood, thyme, hyssop and marjoram, and between 5 and 10 spices such as coffee, cinnamon and star anise macerated with the winery's sake. 15% vol., 75 and 20 cl formats. The more spiced, quinine-like red version completes the range.
