Overall impression
Berumotto Rojo concentrates the line on spice and bitterness: the same Tuixent sake and Trementinaires valley herbs as the white, but with a more intense, woody and quinine-like profile. Seda Líquida makes it on house-made sake following a formula inspired by Priorat artisan vermouth, aimed at those seeking a singular aperitif without a wine base.
Nose and palate
Dark golden colour. Aromatic, woody, spiced and rugged nose; very spiced, bitter, quinine-like and slightly balsamic palate. More intense than the white, with a long finish.
How to serve it
At 8 °C in an old fashioned glass with one or more stuffed olives and orange peel. As a very fine, subtle drink, the winery does not recommend conventional ice: only stainless-steel cubes or waterproof-covered cubes. Pairs with salted, pickled or fried bites.
Production context
23 aromatic herbs —in practice, more than 30— including wormwood, thyme, hyssop and marjoram, and between 5 and 10 spices such as coffee, cinnamon and star anise macerated with the winery's sake. 15% vol., 75 and 20 cl formats. Seda Líquida, S.L., founded in 2015, has pioneered high-quality sake in Spain since its first production at the end of February 2016.
