Casa de Canhotos Sublime Vermute
Vermutpedia Score: 7.4/10
Overall impression
Casa de Canhotos Sublime Vermute comes from Penso (Melgaço), the parish where Fernando Rodrigues launched the Alvarinho brand in 2006 that takes the name of the area's historic house. Adjacent vineyards on granite soils and the Atlantic microclimate of the Monção e Melgaço subregion supply grapes exclusively from estate production with rigorous selection criteria. 15.5% vol., 75 cl. For Vermutpedia, Sublime represents Portuguese vermouth with Minho identity — Alvarinho base rather than generic white wine, Atlantic freshness and artisan scale from one of Melgaço's most characterful producers.
Nose and palate
Alvarinho-based vermouth that inherits the citrus and mineral character of the Minho grape. Intense aromatic profile with balance between sweetness and refreshing acidity; long finish that prolongs the Atlantic identity of the base wine. Compared with Spanish or Italian whites, Sublime bets on single-varietal Alvarinho expression — citrus, mineral and floral — rather than anonymous blends. Expect semisweet balance with enough acidity for aperitivo and enough body for light cocktails.
How to serve it
Serve very cold, alone or in cocktails, with citrus peel; aperitivo that dialogues with seafood and white fish from the region. Temperature between 6 and 10 °C in a wide glass or coupe. Works in spritz with soda when Alvarinho citrus and mineral character should remain visible. Pairs with grilled sardines, octopus and Minho river fish — natural gastronomic context for Melgaço vermouth.
