Overall impression

Vermutpedia is re-evaluating the Italian catalogue; the Vermutpedia Score for this entry remains pending until the next tasting round. Cerutti Vermouth Bianco di Torino is the white expression of a Canelli (Piedmont) liqueur house whose history begins in 1959, when Maria and Aldo Cerutti started liqueur production under the ILAS name in a city densely populated with small makers of wines, sparkling wines and vermouths. According to famigliaceruttiliquoridal1959.it and puntobere.it, the current recipe respects faithfully the Cerutti spouses' formulation, already liqueur makers in Canelli since the 1960s; Punto Bere srl relaunched the line as Famiglia Cerutti Liquori dal 1959. The white is born from Piedmontese white-grape wine aromatised with a secret blend of herbs and spices, transparent and elegant within the Torinese tradition. At 17% vol. and one-litre format, it offers a generous white for bar and home. Tenuta la Bacca — family agricultural estate from 2019 in Canelli — cultivates juniper and other zero-kilometre botanicals that feed the project's territorial philosophy.

Nose and palate

Official Famiglia Cerutti documentation describes a transparent, luminous vermouth of immediate olfactory impact. On the nose, chamomile, hop and coriander dominate, with a background of officinal herbs that evoke the Piedmontese pharmacy without becoming medicinal. The taste is slightly abboccato — semisweet on the Vermutpedia scale — of great agility, refreshing and thirst-quenching; the palate confirms freshness and lightness, without the heaviness that often affects sugar-loaded industrial whites. Texture is fluid and aromatic, where the territory's white base wine supports floral and herbaceous layers without dominating them. Against anonymous mass-distribution whites, Cerutti Bianco offers recognisable Torinese personality: chamomile, hop, coriander and contained elegance, coherent with the maison's self-definition as faithful interpreter of taste from another era.

How to serve it

Cerutti Bianco di Torino is enjoyed very cold, neat or in Torinese-school classics: white Martini, dry aperitivo with soda or lemon twist. With its light abboccato character and 17% vol., it works in extended aperitivo sessions and in moderate spritzes where the white brings florality without excess sweetness. In mixology, it fits Bronx variants, Vesper with herbal profile or combinations with soft bitters. Serve between 6 and 8 °C in an aperitivo glass or low tumbler with ice and green olive. Pairs with antipasti, salads, white fish, fresh foie and light Piedmontese cooking. Available through famigliaceruttiliquoridal1959.it and the Punto Bere network; the one-litre format invites domestic bar and volume mixology without sacrificing artisan quality.

Production context

Famiglia Cerutti produces in Canelli (Asti), historic heart of Italian vermouth alongside names such as Contratto, Riccadonna or Gancia. Aldo and Maria Cerutti began in 1959 with liqueurs and herb distillation; products such as Vermouth Bianco di Torino were born in that context and were relaunched by Punto Bere under Famiglia Cerutti Liquori dal 1959. The white is made with Piedmontese white-grape wine, sugar, alcohol and natural flavourings; botanicals from Tenuta la Bacca — juniper and zero-kilometre plants — reinforce the territorial link since 2019. 17% vol., 1 litre. The maison declares membership in the Vermouth di Torino universe and shares spirit with the historic rosso recipe. For Vermutpedia, Cerutti Bianco is a reference for artisanal Torinese white: Canelli, ILAS tradition and Tenuta la Bacca botanicals in generous format.
