Vermut Goyesco Ámbar is the elder sibling of the Goyesco line from Bodega Delgado Zuleta — the oldest bodega in the Marco de Jerez, with documented origins since 1719 — which, after the success of the pioneering manzanilla vermouth, shifts protagonism to amontillado, the great traditional wine of the Marco. According to the official shop, it starts from a selection of house amontillados, made through the criadera and solera system in American oak butts with 100% palomino, in which natural plant extracts inspired by the virgin nature of Doñana macerate separately: rosemary, pennyroyal, wormwood, gentian, vanilla, bitter orange peel, sage and others. Amber vermouth at 17% vol., 75 cl bottle. How to serve it
Delgado Zuleta places Goyesco Ámbar as vermouth that shines at aperitif: thanks to the structure that old amontillado confers, it stands out especially with very mature and blue cheeses, according to the bodega. Its complexity makes it a safe bet in cocktails, above all in combinations that stimulate appetite. Serve very cold, between 6 and 8 °C, in a wine glass or low tumbler; also alone, without ice that would dilute the hazelnut character, to appreciate the oxidative base. Pairs with ibérico ham, anchovies, mojama and toasted dried fruit — tapas that dialogue with noble wood and almond notes. Not vermouth for those seeking flor lightness: it shines where depth and elegant bitterness are needed.
