Overall impression

Vermut Blanco Carvajal is the flor vermouth of Carvajal Wines (Sanlúcar de Barrameda, Marco de Jerez): vermouth wine with a Manzanilla de Sanlúcar base and a touch of Moscatel, 95% Palomino Fino and 5% Moscatel, macerated with aromatic plants and natural botanicals according to the official technical sheet. Parallel bet to the Rosso on Oloroso de Jerez from the same house.

Nose and palate

Elegant golden yellow colour. Nose: aromatic herbs, lemon peel and manzanilla memories. Fresh and citrus palate; sapidity and elegant bitterness typical of flor; dry final sensation according to Spanish Liquors (~90–110 g/l residual sugar on the technical sheet). The manzanilla base brings saline freshness and flor character that distinguish Carvajal Blanco from generic Spanish whites and from the house's own oloroso Rosso. Compared with solera-heavy Jerez vermouths, this is the lighter, more aperitivo-oriented face of Carvajal's vermouth pair.

How to serve it

Aperitivo with olives or fried potatoes and lemon peel; pairs with tortillita de camarones, fried fish or Iberian ham. In cocktails: Carvajal Blanco & Tonic or Dry Carvajal with gin. Serve very cold (6–8 °C) to preserve manzanilla sapidity. The citrus and flor profile rewards simple service — wide glass, ice, lemon twist — over complex mixology. 17.50 € RRP in the official shop.
