Vermut Rosso Carvajal
Overall impression
Vermut Rosso Carvajal is the oxidative wine vermouth of Carvajal Wines (Sanlúcar de Barrameda): vermouth wine with an Oloroso de Jerez base and a touch of Pedro Ximénez, 95% Palomino Fino and 5% PX, macerated with aromatic plants and natural botanicals according to the official technical sheet. Together with the manzanilla blanco, it represents the family bodega's Jerez bet to cross solera and vermouth.
Nose and palate
Dark mahogany colour, clean and brilliant. Aromas of oloroso wood, spice, frosted fruit, orange, dried fruit and brown glazé. Harmonious palate between wine and botanicals; dry and soft oloroso finish, elegant and balanced bitterness. 19% vol. according to Spanish Liquors sheet — higher than the blanco and consistent with oloroso character. Compared with generous solera vermouths like Canasta, Carvajal Rosso is more oxidative and less PX-opulent, betting on en rama oloroso identity and natural botanical maceration from a family Jerez bodega.
How to serve it
Aperitivo with olives or fried potatoes and orange peel; Andalusian tapas. Cocktails: Rosso & Tonic or Aperitivo Carvajal with gin and soda. Serve very cold (6–8 °C) in a wide glass. The dried fruit and oloroso wood profile pairs with jamón, aged cheese and fried fish. 18 € RRP in the official shop. Higher alcohol supports Negroni and Manhattan when a Jerez oxidative red is wanted without Canasta-level sweetness.

Produced in Sanlúcar de Barrameda by Carvajal Wines. 19% vol., 75 cl, Bordeaux bottle with mushroom cork; 90–110 g/l residual sugar according to the technical sheet. 18 € RRP in the official shop. Distinct from the manzanilla blanco by higher alcohol and oloroso oxidative character.
