Overall impression

Vermut Diábolo Blanco is the artisan white vermouth of Bodega Cooperativa Santa Catalina del Mañán (Monóvar, Alicante). Per commercial sheets, it starts from Macabeo: after maceration with Mediterranean flowers, aromatic herbs, roots and botanicals — with citrus to the fore and fewer bitters than the red — wine from dried grapes is added for sweetness and to bring the strength to 15% vol. The house highlights no artificial preservatives, with fermentation alcohol as the natural preservative. Same Diábolo storytelling and 75 cl swing-top bottle as the red. Sweeter and fresher profile than its red counterpart.

How to serve it

Very cold, without ice, with an olive; also with ginger or green apple, or mixed with tonic, soda or sparkling water. Commercial channels also recommend ice and a lemon slice. Pairs with aperitifs, meats, fish and seafood.

Production context

Made in Monóvar by Cooperativa Santa Catalina del Mañán: Macabeo base, Mediterranean botanical maceration (citrus, flowers, herbs and roots) and dried-grape wine to 15% vol., per distribution sheets. 75 cl format; contains sulphites. No barrel ageing declared. White reference of the Diábolo range alongside the red.
