Dry Navazos Vermut Blanco Seco
Overall impression
Dry Navazos Vermut Blanco Seco is the absolutely dry white reference of Equipo Navazos' vermouth project (Jerez), made by Eduardo Ojeda on Jerez fino with four years' average age. Aromatised wine without a drop of sweetness, elegant bitterness and citrus profile with grapefruit notes per official website. Sold in numbered La Bota editions —current reference La Bota 133, February 2025, 2,200 bottles— at 17% vol. The house presents it as extraordinary dry white vermouth, clean and complex, radical versus conventional sweet rosso. For Vermutpedia, Dry Navazos defines cult dry Jerez vermouth: fino flor, zero sugar and limited runs.
Nose and palate
Pending evaluation.
How to serve it
Equipo Navazos recommends drinking very cold, neat, with lemon slice or lightly dressed green olive. Star of the «Dry Navazos» cocktail, especially combined with La Bota de Gin from the same house. Also in dry Martini or highballs when white vermouth with fino salinity and herbal bitterness is wanted. Not oriented to sweet spritz: vertical, citrus aperitivo. Very cold in small glass or low tumbler.
Production context
Equipo Navazos makes Dry Navazos in Jerez: Palomino fino with four years' average age, aromatisation without sweetness under Eduardo Ojeda. Successive editions —La Bota 123, 133, etc.— with variable numbering and date. 17% vol., 75 cl. Conceptual pair to moderate-sweetness Vermut Rojo Navazos. For Vermutpedia, Dry Navazos synthesises limited-edition dry white Jerez vermouth: fino, 17% vol. and sheet at equiponavazos.com.
