El Palique de Jerez is the Jerez vermouth from the El Palique collection by Mora-Figueroa Domecq Brandy & Sherry (Jerez), one of three varieties honouring vermouth traditions of Jerez, Madrid and Reus. Made from oloroso wines with about fifteen years' oxidative ageing in criaderas y solera, plus Pedro Ximénez in maceration; the official website highlights polyphenols from old wood, structure and elegant bitterness. Mahogany colour with amber edges; high-intensity nose: incense, orange peel and orange blossom, clove, cinnamon, wormwood, Cretan dictamnus and angelica over old olorosos. 15% vol., 75 cl. For Vermutpedia, El Palique de Jerez embodies winery Jerez vermouth with oloroso solera soul.

How to serve it
Serve very cold with ice and orange slice to evoke the Holy Week Jerez profile the house describes —incense and orange blossom. Also in Manhattan or Negroni when vermouth with glyceric body and oxidative character is wanted. Pairs with olives, almonds, aged cheeses and Marco preserves. Balloon glass or low tumbler between 6 and 10 °C; moderate sweetness and oloroso unctuousness invite slow aperitivo.

Mora-Figueroa Domecq S.L. makes El Palique de Jerez with fifteen-year oloroso base in criaderas y solera system, maceration with botanicals —wormwood, dictamnus, angelica, citrus and spices— and Pedro Ximénez addition. 15% vol., 75 cl.
