La Madre Vermut Dry is the extra-dry white of Josep Maria Castillo's Batea range in Terra Alta (Tarragona): a deliberate answer to drinkers who want white vermouth with minimal sweetness for serious cocktail work. It shares the same mother essence of thirty-two botanicals—twenty-two of them local—macerated in ceramic amphorae and barrel before blending with Garnacha Blanca and Macabeo, according to Glass Revolution. Where the house semisweet white leans approachable, the Dry is radical: uncompromising dryness, botanical clarity and a profile built for the bar rather than the terrace.

Nose and palate

ViOrigen describes an intense, dry, attractive nose where vanilla and lavender lead. On the palate it is strikingly dry: star anise and nutmeg dominate, with an intensely bitter finish lifted by acidity that keeps the glass fresh and inviting. The contrast with La Madre's semisweet white could hardly be sharper—same craft philosophy, opposite sugar register.

How to serve it

Serve over ice with tonic or use it in a Clarito and other classic dry cocktails, as ViOrigen and export channels recommend. This is vermouth for mixology: the extra-dry frame lets gin, citrus and soda shine without residual sweetness. Chill well before service.

Made in Batea (Tarragona) on a Garnacha Blanca and Macabeo base with thirty-two botanicals. Fifteen percent alcohol, 75 cl (~€9.00 RRP at ViOrigen). Fourth core reference alongside Rojo, Blanco and Rosado; Reserva sits apart as the premium barrel-aged line.
