Overall impression

Merwut is Stefan Dorst's Wermutwein (Dorst & Consorten, Landau, Pfalz): artisan vermouth at 18% vol. on quality German base wine, wormwood herbs and natural botanicals, spirit and sugar (~60 g/l per specialist press). The idea comes from Dorst's visits to village bars in Aragón — where he has made wines at Venta d'Aubert since 1998 — seeking a finer, more elegant vermouth where the base wine still shows, against darker, sweeter Spanish bulk profiles. He does not aim to cover white/rosé/red separately but to unify styles: neither extremely sweet nor dry, with bitter herbs, dried fruit and medicinal plants. «Merwut» plays on Wermut (wormwood/vermouth) and Mut (courage). For Vermutpedia, it documents Palatinate author vermouth inspired by Spain.

Nose and palate

Pending evaluation. Distributors: finely spiced, light sweetness, broad aromatic range; balanced, without harsh bitter-sour edges of many classic Wermut wines.

How to serve it

Neat, with a lemon slice, or with lemon juice on ice; also with lemonade, soda or tonic (merwut.de). Dorst's tip: wine glass, 4 ice cubes, ~100 ml Merwut and an eighth of lemon (optional squeeze of 10 drops). Works in Manhattan or Boulevardier; aperitif or dessert. About 8–10 °C.
