Overall impression

Ó Vermut Rojo is the emblematic creation of Óscar Solana, Cantabrian bartender and former Taberna La Solía: an artisan vermouth that sought «something very Cantabrian» and found it in rock tea or port tea (Sideritis cantábrica). Built on white wine with more than eighty botanicals — wormwood, cinnamon, vanilla, cardamom, quinine — and a second maceration with the local herb that sets it apart from any peninsular red. 89 Peñín; gold IWA 2019.

Nose and palate

Intense, bright red with amber flashes. Spiced, perfumed nose: vanilla, cinnamon, sage, rosemary, chamomile, pennyroyal, bay, coriander and hazelnut, with the unique herbal note of rock tea. On the palate ripe cherry and orange, caramel and balanced vermouth bitterness; port tea adds an extra herbal layer. Smooth passage, designed for neat drinking and cocktails.

How to serve it

Ice and orange twist; Negroni or Manhattan with Cantabrian nuances. Pairs with aged cheeses, Iberian charcuterie and olives.

Production context

White wine + alcohol + sugar; colour from must and green walnut shell. Maceration with more than 80 plants; second maceration with Sideritis cantábrica. Rest in old solera casks for homogenisation. No preservatives. 15% vol., 75 cl. Range includes Vermut Blanco Ó (macerated in eucalyptus).
