Vermouth Pando is the sole Pando reference of Williams & Humbert and the second vermouth from the winery after Canasta rojo (2008). According to williams-humbert.com, it is an aromatised beverage based on Pando, a reference wine from soleras founded 140 years ago, with an average five years of biological ageing under flor in American oak butts (criaderas y soleras system). Made with Palomino from Pago Balbaína (Jerez Superior), declared dry profile, 15% vol., one-litre bottle. Juan José Mesa describes it as golden yellow, delicate, elegant and very balanced. The house communicates 25% less sweetness than Martini Bianco — a clear bet on dry Jerez white vermouth. For Vermutpedia, Pando is the Andalusian answer to herbal, low-sugar white vermouth, with the soul of Fino and macerated botany.

Nose and palate

Official tasting note: delicate, elegant and balanced aroma; maceration aromas resulting in very elegant vermouth. On the palate, fresh, acidic, subtle sweetness and present bitterness — drier and more herbal profile than commercial sweet white vermouths. Wormwood and dictamnus mark the botanical character on a Pando fino base; flor and solera bring salinity and fine bakery typical of biologically aged wine. Compared with sweet Canasta rojo, Pando is austere and vertical; against Martini Bianco, less sugar and more Jerez acidity. The litre format invites everyday use in spritz and aperitifs, but the product has sufficient personality for a glass on its own. Clean finish, integrated herbal bitterness, without the cloying roundness of PX. A white for those seeking fino, Jerez solera and dry aperitif with botanical clarity.

How to serve it

Williams & Humbert recommends consuming it cold, on its own or with ice; mixed with juices; as part of cocktails; excellent aperitif. The house also markets Pando Spritz as a ready-made derivative. Ideal with tonic or soda — dry spritz — and soft bitter; less suited to classic white Negroni for its dry, fino profile. Serve very cold in a tall glass or wide tumbler; a green olive and lemon slice complete the dry Jerez aperitif. At the bar, it substitutes sweet white vermouth when fino salinity and bitterness are sought.
