Siderit Vermut
Vermutpedia Score: 7.5/10
Overall impression
Siderit Vermut is the vermouth from Destilería Siderit in Arce (Cantabria), launched in 2016 as the first commercially available Spanish vermouth with no added sugar — Accésit Alimentos de España for Innovation 2017 — and with two gold stars at Great Taste Awards 2018 (UK). Based on Pedro Ximénez with eighteen months' maceration of herbs in hydroalcoholic solution; sweetness comes only from the must. Sherry cask ageing stabilises colour and aromas, plus a second maceration of flowers. The label highlights rock tea as the house's distinctive botanical.
Nose and palate
Intense mahogany red with amber highlights, clean and free of haze. Very intense nose: wild flowers, aromatic and spiced herbs, a touch of wood and balsamic nuances lending pleasant bitterness. On the palate it is smooth, with perfect balance between natural sweetness and acidity; long, unique finish with intense bitter notes reflecting botanical quality.
How to serve it
With ice and orange peel; in cocktails when seeking herbal freshness without added caramel. Pairs with pickles, dried fruit, charcuterie, cheeses and desserts with dried fruit.
Production context
15% vol., 75 cl (also 10 cl miniature and 5 L bag-in-box per 2026 product dossier). Vermouth range: classic reference, limited annual Reservas in Spanish white oak or cherry — such as Cherry Wood Reserva 2020 — and numbered editions.
