Universo Blanco Vermouth is the premium white expression of Soleras de Tomelloso (Tomelloso, Ciudad Real), UN|VERSO range alongside Red and Reserva. According to universovermut.com, a nebula of spices, flowers and fruits with stars such as white chocolate, elderflower, gentian and Bourbon vanilla: a warm, indulgent and intense profile. Part of the 2019 premium project led by Sara Abad as generational renewal of family vermouth tradition since 1962, preceded by Rushmore from 1972. 15% vol., 75 cl. For Vermutpedia, Blanco completes the Tomelloso premium trilogy with a white built for contemplative aperitivo and spiced dessert pairing rather than everyday tap vermouth — exotic botanicals and Manchego craftsmanship in a register distinct from industrial Castilian whites.

How to serve it

Very cold in a premium aperitivo glass; pairs with foie, cheese or spiced desserts. Serve between 6 and 8 °C in a wine or cocktail glass; moderate ice if used, to preserve intensity documented in tasting notes. Works as contemplative aperitivo rather than fast terrace vermouth — the profile invites pause and attention to spice layers. Also in dessert cocktails or after-dinner service when white chocolate and vanilla notes can shine. Pairs with aged cheese, foie gras, white chocolate and spiced pastry. Not ideal for bitter-heavy Negroni builds: it is a white built for indulgence and pairing rather than cocktail utility. Production context

Made in Tomelloso by Soleras de Tomelloso S.L., family company specialised in vermouths and mistelas with viticultural roots since the late nineteenth century and vermouth production since 1962. Selected wines, maceration with white chocolate, elderflower, gentian, Bourbon vanilla, ginger, clove, cinnamon and cocoa among the declared nebula. 15% vol., 75 cl. Completes the Universo trilogy (Red already documented in Vermutpedia + Reserva). UN|VERSO project (2019) fuses traditional family formula with exotic botanicals, spices and fruits.
