Vermouth Pérez Barquero

Vermouth Pérez Barquero is the red vermouth of Bodegas Pérez Barquero, founded in 1905 in Montilla and today part of Grupo Pérez Barquero with the Córdoba, Ruz and Gracia families. Unlike many vermouths fortified with neutral alcohol, the base here is 100% Pedro Ximénez from the Sierra de Montilla, made in traditional 6,000-litre tinajas and subjected to a short but intense biological ageing under flor — the same technique distinguishing its finos and amontillados — before botanical maceration. The winery has produced vermouth internally for more than forty years; this commercial reference represents the leap to today's market with an exclusive plant and spice formula. Andalusian personality, minimal alcohol addition — coherent with Montilla tradition of 15° wines without aggressive fortification — and marked wine character. Sole vermouth reference in the group for now, though the Barquero brand points to range expansion. An aperitivo that does not imitate Italian vermouth but exports Montilla-Moriles grammar to the quinquina world.
Nose and palate
Citrus and spiced aromas on the nose, with complexity from tinaja and flor passage: saline and almond notes from brief biological ageing. On the palate, orange, cinnamon and wood stand out, with the singular memory of bitter almond from the flor veil — a footprint impossible to replicate on generic white wine. Maceration with selected plants — including, per the house, citrus, cinnamon, elder, turmeric and gentian — integrates bitterness above sweetness, with long, persistent passage. Semisweet in practice, though final sensation leans toward noble Montilla bitterness. Silky texture, fully integrated alcohol at 15% vol. Recommended serve 10–12 °C. Neither cloying nor austere dry: it occupies intermediate territory with Jerez echo without being Jerez, and Montilla identity without PX dessert density. An aperitivo that rewards a patient palate.
How to serve it
The winery recommends it neat or on ice at 10–12 °C, as a great companion to pickles, salted fish and all kinds of tapas. In Andalusia it works as terrace vermouth with olives, gildas and boquerones en vinagre; in a copa balón with orange or lemon slice it gains freshness without losing background almond. Also in simple combinations — soda and citrus — where PX base brings body. Not the obvious candidate for a heavy Negroni, but for a Mediterranean aperitivo seeking something with Spanish roots. Pairs with aged cheese, ibérico ham and seafood preserves. Standard 75 cl format. Serve cold but not glacial, so spice and wood note express without muting. Process: Pedro Ximénez grape from Sierra de Montilla → wine in traditional tinajas → short, intense biological ageing under flor → transfer to steel tanks → maceration with proprietary plants and spices → bottling at 15% vol. The winery highlights fully integrated alcohol thanks to low fortification need — distinctive Montilla trait versus more fortified vermouths. Part of Grupo Pérez Barquero, with four wineries in Montilla-Moriles and centenary soleras including the 1905 collection — whose amontillado reached 100 Parker points.
