Overall impression

Vermut Andalusí Ecológico is the flagship reference from Andalusí Destilerías (El Viso del Alcor, Seville): an organic oloroso aged eight years in French oak casks, with a light touch of organic Pedro Ximénez, macerated with around ten certified organic aromatic plants. Not to be confused with the VRMT Receta Andalusí from Bodegas Robles (Montilla). Bright mahogany-red colour; Andalusian warmth with quince jelly, honey and rosemary.

Nose and palate

Nose: a symphony of organic botanicals — quince, honey, rosemary, clove, gentian, cinnamon and vanilla from the oloroso base. On the palate it is pleasant, with a soft, sweet opening of vanilla followed by characteristic vermouth bitterness, according to andalusidestilerias.com.

How to serve it
