Overall impression

Vermut Tres Rocinante is the craft red vermouth from Finca La Gallega (San Clemente, Cuenca), the Tres project of Bodegas Talamingo with over a century of family viticulture. Base of Syrah (60%) and Chardonnay (30%) sweetened with honey — not caramel — and local botanicals: bay, rosemary and other aromatics hand-harvested nearby. Italian spirit through lower sugar than traditional vermouths, but Manchegan essence; balance of sweetness and bitterness where no element dominates.

Cold as an aperitivo or in a spritz; ideal for discovering artisan Manchegan vermouth with an orange slice.
