Overall impression

VRMT Receta Andalusí is the sole VRMT reference from Bodegas Robles (Montilla): an organic vermouth built on an eight-year-old Pedro Ximénez oloroso aged in solera and criaderas, macerated with ten plants from the bodega's own organic vineyard. A collaboration with chef Paco Morales (2 Michelin stars) since 2016; aromas inspired by the gastronomy of al-Andalus — clove, cinnamon. Distinct from the standard Vermut Ecológico Robles.

Nose and palate

Vanilla, quince jelly and honey from the aged oloroso; wormwood, gentian and elderflower among the spiced botanicals. Clove and cinnamon add the warm Andalusian signature. An indulgent palate with a sweet-bitter-acidic balance and a long finish.

How to serve it

With ice and orange; pairs with olives, cheeses, ham, smoked foods, shellfish, fish (tuna, cod, salmon) and sweet desserts or dried fruit.
