Amaro

Amaro is an Italian liqueur of herbs, roots and spices, usually bittersweet and digestive. It is not vermouth because wine is not an obligatory base.

The amaro family covers very different recipes, from citrus expressions to intensely bitter formulas. Compared with vermouth, it usually has a higher strength and a structure based on alcohol, sugar and botanical extracts.

It can be drunk neat or used in cocktails such as the Negroni. The comparison with bitters and Americanos clarifies differences that the “aperitif” label often hides.
