Soda siphon

The siphon dispenses carbonated water under pressure and is used to lighten vermouth without losing all its aromatic intensity.

A short squirt of siphon reduces the sweet and alcoholic sensation, adds bubble and makes the glass more refreshing. The amount depends on style: an intense red admits more dilution than a delicate dry.
