Overall impression

Organic White BioMio Vermut is the organic white of Bodegas Valdepablo's BioMio range in Terrer (Calatayud). Launched in 2016, the line brings together premium vermouths and sangrias made with organic wines, organic cane sugar and traceable botanicals. Against the litre-format Casa Valdepablo Blanco, BioMio opts for certified organic agriculture and a more expressive nose — white flowers, wild herbs — aimed at palates seeking a clean, Mediterranean aperitivo. It shares Valdepablo's vermouth heritage since 1928 with BioMio red and the sangrias of the range.

Nose and palate

Yellow colour with golden highlights. The nose shows high olfactory expression of white flowers and wild herbs, evoking pure nature. On the palate it is an expressive vermouth with herbal notes and hints of vanilla, a long aftertaste echoing the wild and balsamic flowers of the nose, closing with a fresh, citrus finish.

How to serve it

Very cold in a wide glass with large ice cubes; pairs with salads, fresh cheeses or light seafood. Spritz with soda or tonic when you want an aromatic organic white without dominating the glass. The winery includes this vermouth in BioMio tasting packs alongside the red and the sangrias of the line.

Production context

Made in Terrer with organically farmed grapes and organic cane sugar, following the BioMio philosophy of natural ingredients without synthetic pesticides or chemical fertilisers in the vineyard. 15% vol., 75 cl.
