Valdepablo Vermut Selección
Vermutpedia Score: 9.1/10
Overall impression
Valdepablo Vermut Selección is the premium expression of a family bodega in Terrer (Calatayud) that has made vermouth since 1928. Against Casa Valdepablo — direct, accessible aperitif — the Selección line opts for more worked base wines, prolonged maceration and longer rest, a profile designed for slow drinking. The house places it alongside Gran Añada as a reference for those seeking complexity within the range.
Nose and palate
Mahogany colour with amber nuances. Intense nose: aromatic herbs, balsamic notes and spices — wormwood, rosemary, star anise and chamomile appear in the bodega's descriptions for vermouths in the range — with wood touches from barrel passage. On the palate it is smooth but with personality: caramel, clove and herbs merge in a long aftertaste; bitterness balanced by the vanilla of oak ageing.
How to serve it
Cold with ice and orange slice; also in a Manhattan or classic-cut Negroni. Valdepablo recommends the Selección and Gran Añada lines for those who want to go beyond a quick aperitif.
Production context
Made in Terrer with grapes from Calatayud, botanical maceration for weeks (classic Casa works around two; the premium range extends contact) and barrel ageing. 16% vol., 75 cl. The range includes Casa, Selección, Gran Añada, white and BioMio organic references.
