Organic BioMio Red Vermut

Overall impression
Organic BioMio Red Vermut is the red of Bodegas Valdepablo's organic range, launched in 2016 as premium organic vermouth and sangria made in Spain with local products. BioMio combines the know-how of a house that has made these aperitivos since 1928 with organic wines, organic cane sugar and a Mediterranean touch. The winery stresses that farming without synthetic pesticides or chemical fertilisers yields a base wine with fewer aromatic interferences, so the botanicals gain room in the glass. The result is an expressive vermouth with a herbaceous, spiced profile, distinct from classic Casa Valdepablo through its organic traceability.
Nose and palate
Attractive mahogany colour with amber hints. Expressive and complex on the nose with notes of spices and medicinal herbs, liquorice and wood. On the palate, balance between sweetness and bitterness from the chosen botanicals stands out; soft bitter touch with notes of oak, spices, dried fruit and medicinal herbs, softened by a citrus finish that brings freshness and an easy passage.
How to serve it
Cold with ice and olives or toasted nuts; the BioMio line targets simple, quality aperitivos. Also in Negroni or Americano when you want an organic Aragonese red with more herbaceous complexity than mass-market options. Available at valdepablo.com and in BioMio tasting packs.
Production context
Made in Terrer (Zaragoza) with organically farmed grapes, organic cane sugar and botanicals selected under traceability criteria the house applies across the BioMio range. 15% vol., 75 cl. The range includes white and red vermouth, sangrias and cooking references; Valdepablo presents BioMio as the clearest example of what happens when every ingredient's origin is cared for from the vineyard.
