Vermut Segovia Blanco is a 100% natural vermouth from Diablo Cojuelo, the Segovian gourmet tavern. After macerating flowers, aromatic herbs, roots and botanics on local white wine, the house adds raisined-grape wine for sweetness and to lower strength to 15% vol., without artificial preservatives: fermented alcohol acts as natural preservative. It completes the house vermouth range alongside Monastrell red and juniper red. For Vermutpedia, it is the floral, summery Castilian counterpart to the house's spiced reds.

Nose and palate

Straw-yellow colour, crystalline and transparent. The official tasting note highlights ample floral freshness, a very fruity profile with peach and ripe fruit. On the palate it expresses greedily and envelopingly, with balance between natural sweetness and soft bitterness typical of traditional Segovian style.

How to serve it

Diablo Cojuelo recommends serving it with ice and a lemon slice, very cold on the terrace or for a light Castilian aperitivo. Ideal as a white alternative to the range's reds in warm weather or paired with preserves and soft cheeses.
