Vermouth Segovia is the 100% natural traditional vermouth of Diablo Cojuelo, the Segovian gourmet tavern. Monastrell macerated with thirty aromatic herbs, without artificial preservatives — the wine's alcohol acts as natural preservative. One of three vermouth references from the house alongside juniper red and white, with Castilian identity and proximity artisan production. For Vermutpedia, it represents Segovian vermouth at its most traditional: natural sweetness from raisined grapes, old-oak ageing and herb garden botany.

Nose and palate

Olfactively, cinnamon and chamomile stand out, with wormwood, oregano, dittany and liquorice bringing reddish reflections and sweet-bitter balance. On the palate, delicate balance between sweetness and a greedy, persistent bitterness — a profile that rewards the classic Castilian vermouth ritual without industrial shortcuts.

How to serve it

Cold, with ice and orange peel, lemon or cinnamon spiral. Store in a cool, dry place.

Production context

Part of the blend ages up to seven months in 400-litre old oak barrels. Sweetness comes from raisined-grape wine, without added sugar, which also adjusts strength to 15% vol. Classic 70 cl bottle with metal cap and mechanical stopper.
