Vecchio is Mancino's first aged Italian vermouth: born from Rosso Amaranto di Torino and resting twelve months in a single cask of new Italian oak. Dark hazelnut brown colour and old-wood character that demand a meditative approach — the meditation edition within the Mancino range, distinct from the vibrant Rosso Amaranto and the author's innovations Kopi and Sakura.
Nose and palate
Rich, enveloping nose: cherry, honey, raisin, dark chocolate and vanilla; old wood and spice. Palate amplified in sweet-bitter balance relative to the original rosso, with notes of quinine, orange peel and liquorice. Barrel ageing integrates the thirty-eight botanicals of Rosso Amaranto with oak warmth without losing the Vermouth di Torino skeleton; texture is broader, finish longer and more contemplative than the unaged base.
How to serve it
Martinez, El Capitán (with pisco) or digestif neat or up. Treat it like an old gentleman, according to the house — serve in a coupe or small wine glass, very cold but without ice that would dilute twelve months of oak integration. Works in spirit-forward cocktails where barrel depth should replace standard red vermouth, and as a slow after-dinner pour with dark chocolate or aged cheese.

Rosso Amaranto base aged twelve months in a single new Italian oak cask; first aged Italian vermouth from Giancarlo Mancino.
