Nose and palate
The Extra Dry organoleptic profile is defined by citrus freshness as the central axis: the brand describes crisp, perfumed notes with raspberry and lemon distillates layered over iris and wood. On the nose, citrus predominates — lemon in the foreground — with delicate floral memories and a fine herbal nuance recalling Italian herbs without Bianco's opulence. Pale gold colour anticipates the lightness of body. On the palate it is dry, fresh and with contained bitterness: citrus acidity cuts richness, the finish is bright and clean, and complexity emerges in successive sips without becoming aggressive. Texture is light, almost ethereal compared with sweet red or white vermouths. How to serve it
Martini proposes the Gin Martini as emblematic cocktail: 25 ml Extra Dry and 75 ml Bombay Sapphire, in a mixing glass with ice, stirred about twenty seconds and strained into a well-chilled glass; lemon twist or olive as garnish. The brand encourages pairing it with sharp, acidic flavours — pickled sardines or anchovies — whose richness Extra Dry cuts with elegance. Alone, with ice and lemon twist, it works as an austere pre-dinner aperitif. In classic cocktails it is the dry vermouth par excellence for Dry Martini in proportions from 15:1 to 1:1, according to the drinker's taste. Its dry, citrus character also suits variants with vodka or intensely juniper London dry gin, where it adds freshness without dominating the spirit.
Production context
Martini & Rossi makes Extra Dry in Pessione, the same Piedmont distillery where Luigi Rossi perfected Rosso in 1863. The historic 1900 recipe uses a base of white wines distinct from Rosso and Bianco, infused with selected botanicals among which orris root and citrus distillates define the dry, perfumed profile. The formula remains under lock and key, passed from master herbalist to master herbalist for generations. 15% vol. and low sugar content — characteristic of the extra dry style — distinguish it from Bianco and Rosso within the range.
