Overall impression

Papatán Picante is the spiced variant from Vermut Papatán S.L. in Torreperogil (Jaén): the same base of local Jaén Blanca and indigenous botanicals of eastern Andalusia — fennel, chamomile, eucalyptus, rosemary, spearmint — as the classic semisweet, with estate-grown cayenne added mid-way through production, which provides the heat. According to the bodega, the result notably transforms the flavours of the reference semisweet — a curious and distinctive effect. Made since 2023 with slow, natural maceration, without essences or flavour enhancers. Third vermouth in the range alongside standard Papatán (75 cl) and premium Edición Pureza (70 cl with gift box).

Nose and palate

The first sip brings warm, spiced sensations from the cayenne, integrated with the honeyed sweetness of the vermouth. As it evolves on the palate, notes of cinnamon, brandy, chamomile and fresh herbal hints of eucalyptus and rosemary emerge, closing on a pleasant bitter touch and a subtle, persistent heat that invites another sip, according to the bodega's published tasting notes.

How to serve it

The bodega recommends serving it well chilled with chocolate — a pairing that, in our view, is truly surprising. Also works with pickles, dried fruit, charcuterie and aged or semi-aged cheeses; with tinned fish, tapas and bold aperitifs; or with tonic, soda or siphon to enhance freshness and personality.

Production context

75 cl, 15% vol. The bodega does not yet have a published technical sheet for the picante; the producer explains that cayenne is added mid-process, not at the start, transforming the profile of the classic semisweet. Vermut Papatán S.L. (Obispo Basulto, 159, Torreperogil) pays tribute to grandfather Sebastián «Papatán» and the quiet endeavour of eastern Andalusia with proximity artisan production.
