Overall impression

Vermú Peregrino Blanco is one of only two references from El Sentir del Peregrino (Atlántica de Vermú, S.L., Vigo): Godello vermouth macerated with thirty-one botanicals — plants and flowers from the Camino de Santiago environment — made without preservatives or colourants. According to the official technical sheet, maceration is on Godello wine; the house completes the process with three months resting in stainless-steel tank. Against the red of the same range — with barrel ageing — the white is the freshest, most luminous expression of the «sentir del peregrino»: harmony between Godello aromatic complexity and the herbal character of the Camino. 15% vol., 75 cl.

Nose and palate

Pale gold, clean and luminous: stainless steel preserves Godello clarity. Open, floral nose with chamomile, elderflower and a trail of wild fennel that recalls Camino herbage; the wine base shows as green apple and a touch of white peach, without cloying sweetness. On the palate it is more vertical than the red: fresh entry, well-marked Atlantic acidity and contained semisweet sweetness. Botanical bitterness arrives clean and short, more citrus (lime, lemon peel) than spiced; medium finish, herbal and clean, built for a cold aperitif or spritz. Less depth than the Rojo, more floral precision.

How to serve it

According to the official tasting sheet, serve in a glass, cold (between 4 and 6 °C) or with an ice stone; may be garnished with a lime slice or lemon peel. Also suits Camino Spritz (blanco, cava, sparkling water and dehydrated orange) or Blanco Peregrino Tonic (blanco, premium tonic, lemon twist and basil), per house proposals.

Made by Atlántica de Vermú, S.L. (Avda. Ricardo Mella, 127, 36330 Vigo, Pontevedra). Base: Godello wine macerated with 31 botanicals; no preservatives or colourants, according to winery information. Three months resting in stainless steel. 15% vol., 75 cl; contains sulphites. Together with the Rojo (six months in used French oak) it forms the entire Vermú Peregrino commercial range.
