Overall impression
Vermú Peregrino Rojo is the aged reference from El Sentir del Peregrino (Atlántica de Vermú, S.L., Vigo): Godello vermouth macerated with thirty-one botanicals and fruits — plants and flowers from the Camino de Santiago environment — made without preservatives or colourants. According to the official technical sheet, maceration is in aged Godello wine with flor ageing; the winery adds six months in used French oak barrels. Against the white (three months in stainless steel), the red seeks more structure and depth within a range of only two references. 15% vol., 75 cl.
Nose and palate
Mahogany amber with orange glints, clean and bright despite a white-wine base: flor and oak set the colour. Layered nose: dried Camino flowers (chamomile, broom), candied orange peel and a balsamic thyme-rosemary undertone; flor ageing shows as almond and soft toasted bread, without aggressive oxidation. On the palate it enters glyceric, with Godello giving body and well-integrated natural sweetness; wormwood bitterness arrives late and clean, carried by a touch of vanilla and sweet spice from used French oak. Medium-long persistence, deeper than the white of the range: herbal close with a light toast, no industrial caramel.
How to serve it
According to the official tasting sheet, serve in a glass, cold (between 4 and 6 °C) or with an ice stone; may be garnished with orange peel or, even better, grapefruit peel. Also works in a Negroni, author's sour or the house Camino Spritz.

Made by Atlántica de Vermú, S.L. (Avda. Ricardo Mella, 127, 36330 Vigo, Pontevedra). Base: Godello wine with flor ageing, macerated with 31 botanicals and fruits; no preservatives or colourants, according to winery information. Six months in used French oak. 15% vol., 75 cl; contains sulphites. Completes the range alongside the Blanco (three months resting in stainless steel).
