Premium Rosso Vermouth
Overall impression
Premium Rosso Vermouth is Bodegas Navarro's Reserva Especial 1830 (Montilla), the premium tier above monovarietal Vermú La Solé: a blend of raisin Pedro Ximénez —aged twenty-five years— and Garnacha tinta from centenary vines, with thirty-five spices and aromatic plants macerated separately for thirty days in hydroalcoholic mix. The house highlights wormwood, gentian, orange peel and cinnamon among the botanical range. Mahogany with reddish tones; official note of ripe fruit, citrus, herbs and smoked wood; velvety, balanced palate, bitter finish with almonds and dried fruit. 18% vol., 75 cl. For Vermutpedia, Premium Rosso synthesises author Montilla vermouth: long PX solera, floral-fruity Garnacha and Córdoba complexity.

How to serve it
Best served chilled, neat given botanical breadth or with ice and in cocktails. Official pairings: olives, mussels, clams, smoked fish, tuna, cod, salmon, anchovy, squid, cheeses and acorn ibérico; also as dessert liqueur. Balloon glass or low tumbler at 6–10 °C; 18% vol. and PX-Garnacha base stand up in mixed drinks without losing Andalusian character.
Production context
Bodegas Navarro S.A. makes Premium Rosso with raisin PX (twenty-five years) and Garnacha tinta aged separately to form a stable base; individual maceration of thirty-five botanicals for thirty days before final blend. 18% vol., 75 cl. Navarro selects wines and botanicals to showcase Córdoba essence in premium aperitivo. For Vermutpedia, Premium Rosso documents reserve Montilla vermouth: 25-year PX, Garnacha, 35 botanicals and sheet at bodegasnavarro.com.
