Vermú La Solé is the Córdoba vermouth from Bodegas Navarro (Montilla, since 1830), monovarietal Pedro Ximénez from raisin grapes of centenary vines in D.O. Montilla-Moriles. The name alludes to sun-drying of raisins for the sweet fortified base wine; the house defines it as a «dark beauty in polka dots» with Andalusian swing and recovered aperitivo ritual. Five years' ageing in old American oak butts via criaderas y solera system, plus maceration with thirty botanicals. Mahogany colour with reddish tones; official tasting note: ripe fruit, citrus, herbs and smoked wood; velvety, balanced palate, bitter finish with almonds and dried fruit. 15% vol., 75 cl. How to serve it

The official website proposes classic service: low wide glass, ice, olive on a pick and orange slice — and raise the glass after the first sip. Pairs with tortilla pincho, olives, anchovies, clams, mussels, smoked fish and ibérico charcuterie.
