Overall impression

Vermutto Rojo is the artisan vermouth from Bodegas Diez Gómez in Toro (Zamora), under Óscar and Laura Diez Gómez’s Wine Mixology concept. It builds on Américo wines — Tinta de Toro Roble Español (seven months in barrel) and lees-aged Verdejo — infused with ten spices, herbs, citrus and roots: wormwood, clove, coriander, cacao, fennel, juniper, cassia cinnamon, red vine, liquorice and orange peel. Headed with grape spirit from their own pomace and sweetened with sugar from Toro’s beet factory (local crop). A “herb wine” reviving medieval Castilian recipes with Toro character.

How to serve it

Very cold with ice and an orange slice, as the bodega recommends. Bar aperitivo or Sunday vermouth with preserves and Castilla y León cheeses.

Production context

Made in small batches at Plaza Mayor 3, Toro; family vineyards in ungrafted vines under D.O. Toro (~12 ha). ~15% vol., 75 cl, ~€18 at the official shop. Mainly HORECA and wine shops; also shown at Salón Gourmets 2025.
