Wachisnais Blanco is the clear expression of After The Misa Wachisnais S.L., vermouth project of Paco, Noe and Juan Pablo in Pedrosa de Duero (Burgos), within D.O. Ribera del Duero. The brand was born from uniting passion for the authentic with the elegance of simple things and «vermouth hour on Sunday afternoons after mass» as a social meeting point. Made at artisan winery MN Vinos Hnos. Rodero Calderari of Juan Pablo, with Tempranillo and Verdejo wine macerated by infusion with 37 botanicals distributed in five profiles (bitter, sweet, citrus, herbaceous, spicy). The white is semidry vermouth of brilliant yellow colour, sibling of the range red and more luminous than Tintorro. Official RRP €14, 75 cl, 15% vol.

Nose and palate

Brilliant yellow in the glass. On the nose, spiced and citrus character with syrup notes per the official vermutwachisnais.com sheet. The bouquet combines infused botany — five differentiated profiles — with the Ribera base of Tempranillo and Verdejo, without the caramel layer marking the range red. On the palate, perfect balance between smoothness and bitterness, with a luscious entry and silky passage ending in citrus freshness. Semidry profile inviting a second sip. Elegant texture, moderate amplitude, persistence in citrus and spice. Compared with red Tintorro, the white bets on luminosity and syrup versus dark amber and caramel touch of the red.

How to serve it

The house recommends drinking it well chilled, with a single ice cube, accompanied by orange peel. Refrigerate once opened. Ideal as Ribera Sunday aperitif, on terrace or after-dinner with friends — coherent with the brand's social philosophy. Also in light mixed drinks seeking a spiced, citrus Ribera white. Works with soft aged cheeses, olives and Castilian tapas.

Infusion of 37 botanicals in five profiles; Tempranillo and Verdejo base per official elaboration page. 15% vol., 75 cl, €14 RRP. Range published on website: semidry red (Tintorro), semidry white and Celestial (special barrel edition with Rita Hetvin liqueur). No wood ageing for standard white.
