Overall impression
Yellow Vermouth VVV (Vieux Vins de Vouvray) is the garage pinnacle of Jean-Michel Durivault in the Loire: vermouth on 1985 Vouvray chenin, where the botanicals — quince, grapefruit, rose — seek to sublimate the old grape without masking it. «Vintage et pourtant si jeune»: minimal production, 70 cl, 16% vol.
Nose and palate
One third of the wine elevated one year in non ouillée barrel to favour oxidation; the rest on botanical lees before blending. Nose of quince, grapefruit and rose typical of aged chenin; refined oxidative character. Additional one year of refinement before bottling. Complex on the palate, where botanicals and grape converse in layers.
How to serve it
Neat, on ice, cold or at room temperature. In an elegant glass with a rose petal garnish, as the house recommends.
Production context
Made in Vouvray within the Yellow Vermouth universe (Original, RED, LOIRE, VVV). Garage philosophy: reduced batches, parcel chenin and selected botanicals to enhance the character of the base wine.
