Overall impression

Yellow Vermouth Original is 'Le vermouth par nature' of the Yellow range, made from organic wine and fresh plants harvested in the Loire environment. All Original plants are indigenous or acclimatised on the Loire banks: absinthe is grown organically exclusively for Yellow Vermouth; bigarades — no longer cultivated in Touraine orangeries — come from manual gathering on Mediterranean trees; saffron flowered in southern Touraine. Each plant has its own story in the house narrative. Wine is Chenin from environmentally respectful vigneronnes; several trials per plant obtain the best extract. Production intentionally limited: fresh plants, organic wine, must sugar, long process. ~16% vol., 75 cl. Foundational piece of the range alongside RED, LOIRE and VVV.

Nose and palate

Vegetal and citrus complexity of the Loire riverbank: organically grown absinthe, hand-gathered bigaradier, Touraine saffron. Wine is fortified with extracts 'so as to preserve the natural sugar of the grape'; after several months' wait before bottling, complexity reveals itself in bottle, according to the official sheet. On the nose, vegetal artemisia bitterness integrated with floral and citrus notes from bigaradier; saffron spice layer without dominating the whole. On the palate, natural Chenin sweetness balanced with absinthe bitterness; ample texture, persistent finish in herbs and candied citrus. Semisweet 'nature' profile without declared added sugar. Less gourmand than LOIRE (honey, plum stone); more floral-citrus and centred on emblematic Touraine botany.

How to serve it

On the rocks, lengthened with sparkling water or in Americano with Yellow Amaro from the same house — combination the website suggests for the range. Also in Negroni adding a dash of gin to RED or AMARO according to official recipes. Cold service in aperitivo glass or wide tumbler with ice.
