Overall impression

Yellow Vermouth LOIRE is the cuvée inspired by the Ligérien environment of the Val de Loire, 'of local and temporal inspiration' according to yellowvermouth.com. Made on a Chenin base and from the harvest of fresh plants, without pretension: 'it is the reflection of a territory's diversity, an expression of terroir'. Part of the Yellow range alongside Original ('Le vermouth par nature'), RED Classic and VVV of old wines. LOIRE bets on 100% Ligérien botany from cultivation or local gathering — absinthe, black poplar propolis, vine leaf, plum stone, apple peel, honey — with a playful nod to Loire fauna in the house narrative. ~16% vol., 75 cl. 'Nature' vermouth designed for on-the-rocks consumption or lengthened with sparkling water. Not industrial high-volume vermouth: artisan Touraine project with explicit territorial identity.

Nose and palate

It is characterised by the subtle bitterness and vegetal character of absinthe, the slight astringency of black poplar bud propolis, the gourmand aromas of vine leaf, plum stone, apple peel and the sweetness of honey, according to the official sheet. Vegetal-balsamic profile with a gourmand layer that distinguishes LOIRE from Original — more centred on organically grown absinthe, bigaradier and Touraine saffron — and from RED of red varieties. On the palate, subtle vegetal bitterness, slight astringency and honey sweetness in balance with Loire flora. Refreshing texture, herbal-honeyed finish. Less citrus than Original; more orchard and riverside forest expression. The house describes it as nature vermouth, without heavy added-sugar artifice: Chenin supplies fruity body on the base.

How to serve it

On the rocks or lengthened with soda — service explicitly recommended for a nature and refreshing vermouth. Also terrace aperitivo by the Loire, with herbal garnishes or an apple slice reinforcing the formula's botany. Works in Americano with Yellow Amaro from the same house, following proportions the range suggests. Does not require abundant ice: vegetal-gourmand profile gains with moderate cold.
