Vermú Corito Clásico
Torquemada (Palencia) , España
Vermutpedia Score: 8.3/10
Overall impression
Vermú Corito Clásico is the founding reference of the Corito range, the first Palencia vermouth made in Torquemada by Destilería Esteban Araujo after Javier Esteban Araujo revived in 2015 a family tradition dating to 1825, inactive since 1970. Developed over nine months from great-grandfather Néstor's 1900 manuscript. Red vermouth on Viura and Albillo at fifteen degrees, with orange and lemon peel, wormwood, cinnamon, ginger and clove. IWSC silver 2025, CWWSC silver 2026 and Verema 92; accessible one-litre price (~€10) and 100% natural production with grape spirit and artisan maceration.
Nose and palate
Honey-amber colour with coppery edges, very clean and bright. Nose of great aromatic intensity, fresh, citrusy, complex and elegant. Palate marked by wormwood bitterness, well-balanced acidity and a sweet touch that lengthens the finish: persistent, easy to drink and elegant. More intense and bitter than Corito Rojo from the same house; the citrus-spiced profile defines the brand's founding identity.
How to serve it
Designed for the village vermut ritual: wide glass with ice, orange peel and olive, at fifteen degrees in a relaxed aperitif session. Its marked bitterness and balanced sweetness also suit simple mixes with soda or bitter when seeking a Castilian red with character without the high alcohol of Italian vermouths. The one-litre format favours shared drinking at family gatherings, weekend vermut or local bars of the Palencia Cerrato. Pairs with charcuterie, aged cheeses, dressed potatoes and peninsular aperitif preserves.
Production context
Destilería Esteban Araujo makes Corito Clásico in Torquemada (Palencia), Cerrato comarca. Confirmed: red vermouth, Viura and Albillo, 15% vol., citrus and spiced botanicals, one-litre format. Corito Vermú documents the origin: distillery refounded in 2015, first Palencia vermouth commercialised in 2016, recipe based on 1900 family manuscript adapted with local collaborators. Maceration in wine with grape spirit and natural raw materials, no artificial essences per brand philosophy. Range extends with Blanco (Verdejo) and Rosé (Tempranillo).
